Lemon Gelato

When life gives you lemons...make lemon gelato. A little tart, a little sweet, and oh so creamy. Served in a lemon shell for the perfect presentation.




​Ingredients


1 cup lemon juice, fresh squeezed

1 cup sugar

1 cup heavy cream, cold

1 cup whole milk, cold

1/4 teaspoon salt

1 & 1/2 tablespoons lemon zest


​Method


​Prep the Citrus


1. ​Finely grate 1 & 1/2 lemons for the zest, then cut 4-6 medium sized lemons in half and juice them. If you plan to serve the gelato in the lemon shells, cut them lengthwise and gently hollow them out.


​Mix the Base


1. ​In a large bowl, combine the sugar, heavy cream, milk, lemon zest, and lemon juice. Whisk the ingredients thoroughly until the sugar completely dissolves.


2. ​Add the salt and give it a final mix to combine. You will notice the mixture begin to thicken slightly.


​Churn and Freeze


1. ​Pour the lemon mixture into your ice cream maker and churn according to the manufacturer's directions.


2. ​If you are serving the gelato inside the lemon skins, churn the mixture to soft-serve consistency. Spoon the gelato into the shells and freeze for 3 hours before serving. Top with lemon zest and enjoy!
