When life gives you lemons...make lemon gelato. A little tart, a little sweet, and oh so creamy. Served in a lemon shell for the perfect presentation.
Ingredients
1 cup lemon juice, fresh squeezed
1 cup sugar
1 cup heavy cream, cold
1 cup whole milk, cold
1/4 teaspoon salt
1 & 1/2 tablespoons lemon zest
Method
Prep the Citrus
1. Finely grate 1 & 1/2 lemons for the zest, then cut 4-6 medium sized lemons in half and juice them. If you plan to serve the gelato in the lemon shells, cut them lengthwise and gently hollow them out.
Mix the Base
1. In a large bowl, combine the sugar, heavy cream, milk, lemon zest, and lemon juice. Whisk the ingredients thoroughly until the sugar completely dissolves.
2. Add the salt and give it a final mix to combine. You will notice the mixture begin to thicken slightly.
Churn and Freeze
1. Pour the lemon mixture into your ice cream maker and churn according to the manufacturer's directions.
2. If you are serving the gelato inside the lemon skins, churn the mixture to soft-serve consistency. Spoon the gelato into the shells and freeze for 3 hours before serving. Top with lemon zest and enjoy!
